Italian Chip Dip

I had a get together the other day that was very last minute and of course I needed some snacks for our guests.  This recipe is so simple and it’s only 4 ingredients!

Italian chip dip

Just throw all ingredients together and mix.  It’s that easy and so yummy!

Recipe:

12oz Italian dressing
1 can white corn
1 can black beans
1 container of Pico (I use Marketside spicy pico de gallo from Wal-Mart, it’s 10oz)

Drain the the corn and rinse and drain the black beans.  Mix everything together in a bowl and serve.

I found this recipe on Pinterest over a year ago and I can’t even count how many times I have made it, it is so yummy you will want to make it all the time too!

Veggie Chip Dip

It looks so pretty when you make it, just look at all those colors!  I add an extra pepper to mine usually a yellow pepper.  I also use white corn instead of regular.  I am not a fan of canned corn unless it is the white corn so every recipe I do I always switch to white corn.

Five Great Pinterest Recipes

Five great recipes we have made over and over again!  These are my go to recipes that I have made multiple times that everyone in our family loves!  I’m always nervous trying new recipes from Pinterest because some of them have been down right terrible or extremely bland.  I have thrown out several completely inedible dinners!  So here are a few of our favorite recipes, I hope you enjoy them as much as we do!

2) This is another great recipe!  I usually leave the spinach out because if you don’t eat it right away if becomes slimy. I also use fresh red peppers instead of the can.  This is definitely is a go to recipe!

I love this recipe! It is definitely one of my go to recipes.  It’s dump all in and mix recipe.

 4 cups chicken, shredded
1 cup celery, finely minced
1/3 cup yellow onion, finely minced
½ tsp. salt
1 cup mayonnaise
1 cup grapes halved
pepper to taste
Rolls

Cook chicken in large saucepan until thoroughly cooked, remove from heat and shred the chicken.  In a large bowl combine all ingredients and stirring until completely mixed.  Serve on rolls.

I bought a new little nifty torch and I was trying to come up with other ways to use it beside creme brulee and this was one of the way I use mine.  My kids line up to get their strawberry, it make a great treat! Plus you can make only one if you need a quick sugar fix.

You will notice on my blog that we really like strawberries!  Maybe like is not the best word it’s more like LOVE!  So to make this I stab a strawberry with a fork in the leaves and dip the strawberry in Marshmallow Cream, twirling it around until the bottom of the strawberry is covered.  Then I just take my torch and roast it to desired roast.  Finally just drizzle with Chocolate! It’s that simple and it only takes a minute!

Note: Strawberries have to be dry when you put them in the marshmallow cream or it does not stick.

This is one of my personal favorites! If you went to my sister Berkleigh’s wedding this is what we did as one of her desserts.  In Berkleigh’s wedding we used angel food cake instead of pound cake.  Both ways are excellent though.

I have also used raspberries and strawberries over angel food cake.  The fruit combinations here are endless.  In the picture I used Costco pound cake.

1 (3.4 oz) Vanilla instant pudding
2 cups milk
1 (8 oz) cream cheese (room temp)
1 (14 oz) can sweetened condensed milk
1 cup heavy whipping cream
3 tbsp powder sugar
2 cups fresh strawberries
2-3 medium sized bananas
1-2 angel food cakes or 2-3 pound cakes (I usually make the boxed angel food cake)

Directions:

In a bowl combine your milk and pudding and mix for 5 minutes.

In another bowl with a beater mix the cream cheese and sweetened condense milk together until smooth.

In a third bowl beat the heavy cream and powder sugar together until thick and creamy.

Fold in the heavy cream mixture into the cream cheese mixture and mix until smooth.  Then add that to the pudding mixture and mix until it’s completely mixed.  Pour over angel food cake or pound cake and fruit in desired format.

These are definitely a favorite in our family! They are like Hawaiian Haystacks but not at the same time.  They are a butterscotch marshmallow chewy cookie and strangely addicting.  I don’t think they are the prettiest cookie but they sure are great!  I make these all throughout the year because they are so simple to make.  I hope you enjoy this recipe as much as we do!

On medium low heat pour one bag of Marshmallows (regular size) and three tablespoons of butter into a large saucepan and melt until creamy.  Stir constantly until melted.  I have burned the marshmallow once or twice because I either had the heat up to high or didn’t stir it.  So I guess I am a marshmallow snob because I have tried it with a generic marshmallow and it does not taste the same as the Kraft Jet-puffed ones.  Having said that, it may be in my head but either way I will only use those on this recipe!

Once the butterscotch has melted and is a creamy mixture you can add the chow mein noodles.

Mix in your chow mein noodles.  I usually do not use the entire bag.  I like mixing these a little on the marshmallow side so they are super chewy.  I leave about a cup in the bag.  When you stir these the noodle break a bit but that is OK.  Mix them until it is mixed evenly and the chow mein is covered with the marshmallow mixture.  This can take a bit of arm strength to mix.

Fun part! drop them in spoonfuls on parchment paper (I usually coat in butter or just spray with Pam) in the desired size. Mine are usually 1 1/2” or so.  This recipe makes about 60 cookies.  They are not perfectly round.  You can just dumped the whole thing out and cut them into squares later for a chewy bar type of thing.

1 pkg. marshmallows
1 pkg. chow Mein noodles
1 pkg. butterscotch chips
3 tbsp. butter

Melt marshmallows, butter, Butterscotch chips in a large sauce pan stirring constantly.  When they are melted completely remove from heat and add chow Mein noodles.  (I usually don’t add the whole bag, just too desired consistency.)  Stir until noodles are completely covered and then scoop out by spoonful’s on Pam or butter sprayed tinfoil.  Makes about 60 cookies.

Gyoza also known as dumplings are a favorite in the Allen household.  They are also an inexpensive meal.  They can be time consuming but at our house they become a family activity.

Gyoza Start by chopping your cabbage and green onion up into small pieces.  Then throw pork, Napa cabbage, green onion, ginger powder, frozen peas and garlic in a large bowl.  Mix together well, I usually use my hands for this.  BEWARE it can be cold if you use your hands.

Gyoza Take your wrappers and and wet the edges of the wrapper.  I just keep a small bowl of water and dip my finger in the water for each wrapper.  Then spoon in small amount of meat mixture into the middle of your wrapper.

Gyoza Then fold wrapper over and press down on the edges so they stick together.

Gyoza Pinch together little pieces in the wrapper two on each side to hold it together and give it a fancy look.  Repeat the last three steps until you have completed all you have.  I usually end up with a little extra meat.  You could buy another package of wrappers but then you have extra wrappers.  You can freeze these for a later cook date if desired.  When you freeze them lay them out on a cookie sheet evenly so they are not touching and freeze for a couple hours first so they do not freeze together.  Then throw them in a bag and into the freezer.

Gyoza Heat your oil in a a frying pan over medium-high heat.  Add as many fit in the pan without overlapping.  Cook them for 2 minutes on each side or until golden brown.

Gyoza After they are golden add 2 tablespoons of water to the pan.  Turn the heat down to medium-low and cover the dumplings.  Cook them until the water is absorbed. (5 to 7 minutes)  Repeat with the remainder of the dumplings.  I usually serve mine with rice and sauce. (Sauce recipe below)

  • 1 pound ground pork (1 cup)
  • 2 cup diced Napa cabbage
  • 1/4 cup green onion, diced
  • 1 teaspoons ginger powder
  • 1/2 cup frozen peas
  • 2 teaspoon chopped garlic
  • 2 tablespoons vegetable oil for frying, or as needed
  • 30 Won ton wrappers, or as needed (One package)

Preparation:  In a medium bowl, combine the ground pork, diced cabbage, green onion, minced ginger, add black pepper to taste.

Lay a gyoza wrapper in front of you. Wet all the edges with water. Place a teaspoon of filling in the middle of the wrapper. Fold the sides up to form a semicircle, and then pinch the edges to seal. Continue with the rest of the gyoza wrappers until the filling is gone.

To cook them, heat 1 tablespoon oil in a heavy frying pan over medium-high to high heat. Add 12 – 15 of the gyoza and cook for 2 minutes, or until golden brown on the bottom.

Lower the temperature to medium low and add 2 tablespoons of water to the pan. Cover the dumplings and cook until the water is absorbed (5 to 7 minutes). Repeat with the remainder of the gyoza dumplings..]

Dipping Sauce

  • 2 tablespoons soy sauce (1 cup)
  • 1 table spoon rice vinegar
  • hot chili oil to taste

Preparation:  Mix all ingredients in a small bowl and serve with gyoza.
